The chinese calendar is very different to the
western calendar, and the lunar chinese new
year calendar has names that are repeated
every 60 years.

about bringing prosperity and good luck, and the
tradition associated with this time of year lasts for
15 days. The celebrations begin with the customary
chinese new year’s eve family dinner and close
with the lantern festival.

Chilli Prawn Noodles
Ingredients
- 300g raw peeled or Country Range frozen prawns
- 1 red chilli, chopped
- 1 orange or red pepper, deseeded and sliced
- 150g sugar snap peas, sliced lengthways
- 4 spring onions, roughly chopped
- 2 tbsp Country Range sweet chilli sauce
- 3 tbsp soy sauce with a pinch of sugar
- 300g Country Range medium egg noodles, cooked
- small bunch chives and coriander
- oil, for frying
Method
- Heat one tablespoon oil in a wok or frying pan and cook the prawns for one minute. remove.
- Tip in the chilli and pepper and cook for two minutes.
- Add the spring onion and sugar snap peas and cook for one minute, then add the sweet chilli sauce, soy sauce, noodles and about 100ml water.
- Simmer for two minutes until the sauce is
syrupy, then stir in the prawns.
- Garnish with the chives and coriander.
