The word ketchup is derived from the Chinese ke-tsiap, which literally translates as 'pickled fish sauce'.

Seventeenth century english explorers first discovered the delights of this chinese condiment, which is actually more akin to soy or Worcestershire sauce, and brought it west. it gradually went through various changes, particularly with the addition of tomatoes in the 1700s. By the nineteenth century, ketchup was also known as tomato soy, and H.J. Heinz company began selling tomato ketchup in 1876. Ketchup as we know it today is a sweet-and- sour condiment typically made from tomatoes, vinegar, sugar or high-fructose corn syrup, and an assortment of vegetable seasonings and spices such as onions, allspice, cloves, cinnamon, garlic, and celery.

Ketchup is most often served with fried foods such as french fries and fish and chips and grilled foods such as hot dogs and hamburgers. however, it can also be used to flavour cooked meat and as a base for other sauces. here are some suggestions to help you to get the most out of your ketchup:

  1. Marco Pierre White is a keen advocate of using ready-made products in his recipes. his Ketchup vinaigrette is a prime example and perfectly complements salmon fillets or roast chicken. mix 200ml olive oil and 150ml ketchup together. add 1tbsp white wine vinegar, 2tbsp chopped shallots, 1tbsp chopped tarragon, 1tbsp chopped chives, 1tbsp chopped chervil, 1tbsp Worcestershire sauce and around 10 drops of tabasco, or to taste.

  2. Ketchup is an essential ingredient in making vindaloo curry paste. Simply fry 180g chopped onions, along with chopped garlic and ginger to taste, 6g ground paprika, 4g ground chilli and 5g ground cumin. add 400g of diced chicken, lamb or pork, 340g ketchup and 110g water. cook in oven for 45 minutes.

  3. Ketchup is the key ingredient in this simple recipe for meatball sauce. in a medium saucepan mix the ingredients below and simmer until blended, add your prepared meatballs and simmer for about 15 minutes.

    • 1 cup ketchup
    • 2 tbsp Worcestershire sauce
    • 2 tbsp white vinegar
    • ½ tsp onion salt
    • ¼ tsp garlic powder
    • 1 tbsp white sugar

  4. This easy-peasy BBQ sauce recipe is great with burgers and bangers. Place the following ingredients in a blender and mix:

    • ½cup ketchup
    • ¼ cup prepared mustard
    • ½ cup vinegar white
    • 1½ tsp salt
    • 1½ tsp garlic powder
    • 1 tsp black pepper
    • 1 tsp cayenne pepper
    • ½ tsp chilli powder
    • 1/8 cup white sugar

  5. Finally, why not try spiced tuna with pineapple and ketchup glaze? The glaze can be made from ketchup, pineapple juice, white wine vinegar, minced fresh ginger, brown sugar, Worcestershire sauce and lime juice. use your favourite spices to make a spice rub for the tuna steaks - we recommend a blend of cardamom, chilli flakes, turmeric, cinnamon, cloves and cumin. Serve with a slice of fresh pineapple.
