Star anise plays a key role in the slow
cooked dishes that characterise
Eastern Chinese cuisine and combines
particularly well with pork and duck.
It is also the ‘secret’ ingredient in many
Indian stews and curries. Its licorice
flavour enhances a variety of dishes,
both sweet and savoury.
- Gordon Ramsay recommends
glazed parsnips with honey, thyme
and star anise
- The Hairy Bikers recommend baking
whole crayfish tails in rock salt with
20 whole star anise served with
lemon butter
- Add to apricot chutney for a
liquorice hint
- Add to fruit crumbles for a bit of
orie
ntal zing
- Star anise has been used in a tea as
a remedy for colic and rheumatism,
and the seeds are sometimes
chewed after meals to aid digestion.
