Country Range

As the October nights draw us into winter, why not liven up your dishes by getting tasty with the paste-y! Country Range’s green and red pesto sauces are a delicious blend of either red pepper or basil, pine nuts, garlic, olive oil and cheese.

These tangy tongue tinglers are delicious with fish, neat with meat and super in soup. They are also versatile enough to make a variety of vegetarian starters and mains.

So without further ado... here are five tasty ideas for you.

1. Green pesto rib-eye steak
In a bowl, mix up half a cup of green pesto with six tablespoons of grated parmesan cheese, two ounces of softened cream cheese and two tablespoons of minced green onion. Cut into each side of a beef rib-eye steak to form a deep pocket and stuff with the mixture. Press closed, drizzle oil over the beef and season before grilling for 15 minutes on each side.

2. Red pesto-topped cod
Spread your cod with a big dollop of our red pepper pesto, then add some more into a bowl with bread crumbs, lime zest and herbs of your choice. Spoon the bread crumb mix over the cod and press down lightly to make a delicious crust on top. Bake in the oven for 15 - 20 minutes or until the fish is just cooked.

3. Tasty pesto baguette
Cut into 12 slices spreading each side of bread with pesto, then top with cheese spread, fresh cherry tomatoes and bake for around eight minutes on a medium heat before serving on a bed of rocket.

4. Butterflied pesto chicken breast
Add Italian herbs and olive oil to your pesto before spreading over the chicken. Grill for 20 minutes, then top with black olives and serve with salad, potato wedges and coleslaw.

5. Pesto tagliatelle
In a bowl, add your pesto, a dash of extra virgin olive oil, a chopped onion and the paste of one garlic clove along with some mascarpone cheese and peas. Add your cooked tagliatelle to the mixture and serve with garlic bread for a delicious and simple vegetarian dish.
