Cassia, also known as 'cinnamon bark' or 'chinese cinnamon' is a different bark from the cinnamon family. Cinnamon is more commonly found as ground cinnamon or cinnamon quills. Cassia is very similar but it is alot stronger, and because of this it is prefered by many chefs when creating savoury Indian and Chinese dishes.
