Going veggie twice a week is the future 

Everyone is trying to eat less meat with predictions that by 2030 we need to be eating 30% less meat overall to help the planet.
 
For the average meat-eater, this is equivalent to two meat-free days a week. Or six meat-free meals throughout the week, adopting a more flexitarian approach which seeks to reduce meat and dairy but not cut it out altogether.  

15th May marks the start of National Vegetarian Week. Could you stage a veggie takeover and remove meat from your menus for the week?  

If you didn’t publicise it, do you think your customers/ residents/ students would notice?  It’s certainly a challenge for some, but eating a vegetarian diet is easier than going fully plant-based or vegan. Here are some of our favourite vegetarian dishes to give you some inspiration.  
 
 

 
1. Summery ratatouille, bursting with flavour. 
2. Miscellaneous veggie curries - the beauty of these is that anything goes! 
3. Cauliflower mac and cheese, with extra greens (yes please). 
4. Mushroom classics, such as stroganoff or risotto should never be overlooked. 
5. Rainbow veggie salad bowls - celebrate all of those different veggie colours! 
6. Pizza, specifically the classic margarita pizza for its simplicity. 
7. Veggie chilli with all the beans - always a crowd pleaser. 
8. Spinach and ricotta - in any form. In pastry, with pasta on toast. It all works. 
9. The humble veggie traybake, effortless and great in every season. 
10. Eggs in all their glorious shapes and sizes - for breakfast, in a sandwich, with curry, in a quiche or a frittata.
The opportunities are endless with the humble egg.
