Savory success

When it comes to savory, popular ingredients to feature are eggs, salmon, cheese, mushrooms and fresh, seasonal veg.

Lamb and risottos are also tipped as some of King Charles’ favourite foods, so we expect to see operators experimenting with these in special dishes around the coronation.

Aubergine is suggested to be the top veggie / vegan alternative to lamb featuring on menus this May. What flavours are springing to mind?
